Chocolate Crack Recipe (from Joanne Fluke)

Chocolate Crack


Preheat oven to 350F.  Rack in middle position.  Thing is, if your oven cooks hot?  Lower to 325 or watch the time.

Step 1 - Base

Take a cookie sheet (some people call it a jelly roll pan).  10X15,   Line it with tin foil  and spray with non-stick spray.

1 sleeve of graham crackers (approximately) - hell, buy a box and be done with it

Line with graham crackers (not crumbs), it will take about a sleeve of them.  Crack the crackers (hahahaha) to ensure complete coverage. Set aside.



Step 2 - Toffee middle

1 cup of salted butter
1 cup of brown sugar (pack 'er down when measuring)

Be prepared to stand at the stove for 5 mins.  No moving away!

Combine the butter and brown sugar in a saucepan.  Bring to a gentle boil (bubbling) over medium to medium-high heat.  I use a whisk but a spoon works.  STIR CONSTANTLY, do not stop - ever.  Boil it for exactly 5 mins...  Stir stir stir.  If it sputters like mad, bring down the heat.  Always keep a bubbling going.
Keep this amount of boil going for 5 minutes EXACTLY

This is the consistency after the 5 minutes

When the 5 mins are up, pour over the graham crackers as evenly as you can.  It will spread but I go back and forth, diagonal, up and down to try and get good coverage.  Don't fret at all if there are gaps.



Slide in oven and bake at 350F for 10 mins.  Start keeping an eye on the oven at about the 7 min point and take out if it looks pretty golden (before really brownish).  Move right along to next step.


Step 3 - Finale

2 cups of chocolate chips (semi-sweet)

Take pan out of oven and sprinkle chocolate chips evenly over the top.  


Let sit for a min or 2 to let chips soften then spread them out as evenly as you can (spatula or whatever)



Let sit for 10 mins on counter top and then move to fridge for complete cooling.


When chilled then flip over pan (on wax paper lined counter or cutting board).  Peel off foil and Take a sharp knife and CRACK ' ER UP!
